The gastronomy of Valtellina has remained rural and genuine and presents characteristics of frankness and simplicity.
 
Its strong points are the “salumi” – (the most typical and well known is definitely the 'bresaola'), the cheeses (the rich and varied range constitute the pride of the local gastronomy), and the first plates (known and appreciated are the famous 'pizzoccheri', buck wheat is always used for the preparation of the 'polenta taragna', the 'sciatt' and other dishes).
 
It is an austere land rich in ancient tastes. Man had to conquer its fruit through hard work, obtaining from it an exceptional quality: grapes, apples, mushrooms, soft fruit, chestnuts, honey, medicinal herbs. He has obtained conquering tastes appreciated by the most demanding tastes and initiated to the sophistication of good cooking: the buck wheat flour, the milk, the butter, the 'formaggio d'alpe', the 'bresaola' and the sweets having a basis of figs and nuts confer to the local gastronomy a strong typicality, unique in the whole Alpine region. 
 
Gastronomic curiosities also include the food preserves, the jams and the sweets, the types of grappa, softened also by soft fruit, the bitters from Alpine herbs, and the mineral waters.
